Ingredients
- 1½ cups / 150 g graham-cracker crumbs; choose crackers labeled egg-free
- 5 tbsp / 70 g unsalted butter, melted
- 16 oz / 450 g full-fat block cream cheese, at room temperature
- ¾ cup / 90 g powdered sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 1 cup / 240 ml heavy whipping cream, very cold
- 2 cups fresh strawberries, hulled and sliced
Make it
- Lightly grease the base of an 8-inch springform pan and line it with a parchment circle. Mix the cracker crumbs and melted butter until evenly moistened. Press firmly and evenly over the base with the bottom of a measuring cup. Refrigerate while making the filling.
- Beat the cream cheese, powdered sugar, vanilla and lemon juice until completely smooth, scraping down the bowl as needed.
- In a separate bowl, whip the very cold cream to firm peaks that hold their shape, stopping before the cream becomes grainy. Fold one-third into the smooth cream-cheese mixture to loosen it, then gently fold in the remainder.
- Spoon the filling onto the crust and smooth the top. Cover without touching the filling and refrigerate for at least 6 hours, preferably overnight, until firm.
- Run a thin knife around the inside edge and release the springform ring. Pat the sliced strawberries dry, arrange them over the top and cut into eight slices with a clean knife. Keep the cheesecake chilled until serving.
Make it yours
Allow 25 minutes of preparation plus at least 6 hours in the refrigerator; overnight chilling is preferred. Makes one 8-inch cheesecake, cut into eight slices.
Use full-fat block cream cheese at room temperature and very cold whipping cream. Beat the cheese smooth first, then fold in the whipped cream gently so the filling stays light and sets cleanly.
Assemble the cheesecake the day before and refrigerate covered overnight. Add the fresh, well-dried strawberries just before serving.
Choose egg-free graham crackers and inspect their label for additional allergens, including soy. The filling contains milk.
