Spinach goma-ae

Tender spinach is squeezed dry and tossed with a coarse sesame dressing that balances savoury soy and a little sweetness. Served in small portions, this vegetable side delivers a pronounced toasted aroma with very little cooking.

Ingredients

Original recipe: 4 servings. Ingredient amounts scale below; the method is written for 4 servings. For larger amounts, use separate batches and check doneness.

  • 500 gfresh spinach, washed
  • 1500 mlwater for blanching
  • 40 gsesame seeds
  • 1 ½ tbspgluten-free tamari
  • 2 tspsugar
  • 1 tbspwater for dressing

Make it

  1. Toast the sesame seeds in a dry pan over medium-low heat for 2–3 minutes, stirring until fragrant and lightly golden. Tip into a mortar and crush to a coarse paste.
  2. Bring the blanching water to a boil in a large saucepan. Add the spinach and cook for 45–60 seconds, just until wilted and bright green, then drain and rinse briefly under cold running water.
  3. When cool enough to handle, squeeze the spinach firmly in small bundles to remove excess water. Cut the bundles into 4 cm lengths and loosen them in a bowl.
  4. Stir the tamari, sugar and dressing water into the crushed sesame. Toss with the spinach until evenly coated and serve at once or refrigerate until serving.
