Ingredients

Original recipe: About 12 bean fritters. Ingredient amounts scale below; the method is written for 4 servings. For larger amounts, use separate batches and check doneness.

  • 350 gGreen beans trimmed
  • 120 gAll-purpose wheat flour
  • 1 eachEgg
  • 160 mlCold sparkling water
  • ¾ tspSalt
  • ¼ tspBlack pepper
  • 500 mlNeutral oil for frying
  • 1500 mlWater for blanching
  • 1 eachLemon cut into wedges

Make it

  1. Bring the measured blanching water and 0.25 tsp salt to a boil. Cook beans for 3–4 minutes until just tender, drain and pat completely dry.
  2. Whisk flour with the remaining salt and pepper. Add egg and sparkling water and whisk only until a slightly lumpy batter forms.
  3. Heat the oil in a deep saucepan to 350°F/175°C. Choose a pan that keeps the oil below one-third of its height.
  4. Dip small bundles of two or three beans into the batter. Lower carefully into the oil and fry in batches for 3–4 minutes, turning once, until deeply golden and the batter is fully cooked.
  5. Drain on a rack and serve hot with the lemon wedges. Bring the oil back to temperature between batches.
