Guava and cheese pastelitos

Flaky pastry encloses a soft filling of guava paste and cream cheese in these small sweet parcels. Ready-made chilled puff pastry keeps the process manageable while the filling brings a clear tropical tang.

Ingredients

Original recipe: 12 pastries; 2 per serving. Ingredient amounts scale below; the method is written for 6 servings. For larger amounts, use separate batches and check doneness.

  • 500 gReady-to-roll chilled puff pastry containing wheat and butter
  • 200 gGuava paste, sliced
  • 150 gCream cheese
  • 1 eachLarge egg
  • 1 tbspWater
  • 1 tbspSugar

Make it

  1. Heat the oven to 200°C/400°F and line a baking tray with parchment. Cut the chilled pastry into 12 equal rectangles, about twice as long as they are wide.
  2. Divide the guava paste and cream cheese among the rectangles, placing the filling on one half and leaving a 1-cm border. Brush the borders lightly with water from the measured tablespoon, fold over and press with a fork to seal.
  3. Beat the egg with any remaining water. Set the parcels on the tray with space between them, brush the tops with egg wash and sprinkle with sugar. Cut a small vent in each top.
  4. Bake for 20–25 minutes until well puffed, deeply golden on the top and cooked on the base. Cool for 10 minutes before serving two pastries per portion; the filling will be very hot when first baked.
